When you install OpenOffice, there should be a folder in the Start
menu.  If not, I'd suspect it hasn't been installed properly.

That usually occurs in Windows, if there isn't a file extention, such as
.ODT, .DOC etc.  When you use Save as, there's a check box for automatic
file name extension.  Make sure it's selected.  As for the previously
saved files, just rename them to include the appropriate extenstion. 
You can also just start OpenOffice and then open the desired files that way.
