quite a few applications on windows have their own helper applications
to reset the file associations so that you can set the particular
software to be reassociated with the file types that you forgot to
during the installation process. Why not OpenOffice?
well, OpenOffice.org has a method to reset its own file associations, at
least on Windows. Go to Control Panel, Add Software, then search
OpenOffice.org in the list, then click Modify or Repair.
If you want the Microsoft Office applications to restore their file
associations, then that is a problem you should ask at a Microsoft
Office list or newsgroup.
