I had open office before and I never had to do this...but I did it just now and things are opening in Open Office but it is asking me which language I want?

If it's not OpenOffice or Writer, the file association has not been set. If it has been set, then there's some other problem, that requires further investigation. Changing file associations Right click on file icon Select Open With > Choose Program... Check "Always use the selected program to open this kind of file" and choose the desired application.
