What you want can be done, but there is inbuilt facility to do this.

You appear to be using some flavor of Windows, so the procedure is:
Close all instances of OOo, including QuickStarter. Find and make a
backup of the dictionary folder, normally located in: C:\Program
Files\OpenOffice.org 2.3\share\dict\ooo Open the "dictionary.lst" file
in a plain text editor (eg. Notepad) and comment out (#) or delete the
lines referring to the dictionaries, thesaurus and hyphenation languages
you do not need. Save the "dictionary.lst" file, then delete the
referenced files from this folder

You might wish to keep any files in this folder which have the ".sxw"
suffix, so that your "Fonts" and "Dictionary" wizards remain functional.

Restart OOo and if your dictionary setup is as you want it, you can
delete the backup directory.
