Yes, it will print fine on letter size.
Not sure if it is supported, Legal shows up in the paper preference.
What is UPS-PDF and where is it found?

You say you are using a proprietary printer driver from Epson. Are
you suer it
supports legal-size paper?
To see if it's the printer driver that is at fault or something
else, try
printing to a postscript file and see what happens. Or even
install CUPS-PDF
and see what comes out.
