You don't necessarily have to "uninstall" OpenOffice, unless you are
specifically trying out a new version and want to keep the old one.  On
my distro I do updates through YaST, though I am notified automatically
about updated packages.  I haven't been on Windows that much.
As for automated updates, while they are easier to use in one respect,
if just set them on automatic you could open yourself up to some
security flaws through ignorance.  I'm not talking about anything
specific to OpenOffice here.  I am just saying it's a good idea to know
what software you have on your system.
