Select a word file -- go to file --> get info -->click the triangle by "open with" -- select open office from the "open with" menu -- click "change all" once you have selected open office. Repeat with Excel and Powerpoint files -- you will be all set to go.

It sounds like your file associations are messed up, though I don't know how to change them on a Mac. However, you should still be able to open
them, by opening OpenOffice first and then use the File > Open method.
