Write click on the table and select "Table...". Select the "Borders" tab and make your selections there.

As far as I know you will always see the gray guide lines on a computer screen, but if you follow the instructions above they will not appear on the printed document.

If you want a non-editable version to display on screen, without the guides, you could export the document as a PDF file.

To turn them off in Writer, simply right click in the table and deselect "Table boundaries".
