The simplest method is to change the language setting in the Character
style. (Format > Character) Click the font tab and change the Language
dropdown list from English (USA) to German (Germany). Both of these languages
should have a checkmark with an ABC on top of it. (This indicates the German
dictionary has already been installed.)
The only problem with that is you would have to change this setting back
to English (USA) everytime you wanted to write anything in English. That can
be a problem.
The second solution is to create a template for writing German. Open an
untitled document and change the language setting in the Character style to
German (Germany). File > Templates > Save. Name the file with something that
makes sense to you. (e.g., German) Then when you want to write a document in
German, File > New > Templates and Documents. Your template will show up in
the My Templates folder.
You can also modify the Standard toolbar so that the icon for Templates
and Documents is visible on this toolbar. Left click the down arrow at the
right end of this toolbar. Click the Templates and Documents icon, and this
icon appears to the left of the Open icon.
Finally, you might want to learn to use Styles and Formating (F11 key).
To do this, I recommend you first download the Writer Guide from
http://documentation.openoffice.org/manuals/oooauthors2/. Or, if you just
want the chapters of styles, you can download them separately. (There is also
a chapter on styles in the Getting Started Guide on that page for some basic
information on styles.)
