I think you can do this by using the Styles and Formatting window (F11
key). Then define a character style that highlights the selected text. When
your are finished writing the document later, remove the highlighting choice
in the character style. Doing that will remove all of the highlighting at
once. Someone else will have to explain how to assign a key stroke to
applying this created style to selected text.
