Just edit your paragraph style, select “Indents & Spacing”, and set a value for “First Line”. Or you can set the paragraph style to what you want directly from the menus to overwrite the style you are using (which I don’t think is good practice).

2. I work in different languages in the same document, and generally changing the keyboard language layout makes the new text be recognized as in the new language for spell checking and so on. This doesn't seem to happen automatically in Writer -- how can I best handle this kind of task?

The standard method is to create duplicate styles for one of the languages.
