I'm not sure what you're saying but: 1) I don't think I've ever seen anyone claim installing over an earlier 2.x version wouldn't affect that older version. It will always replace it, unless you take extra steps to install elsewhere. It will not affect v1.x.
2) Portable OpenOffice is from someone who decided to modify OpenOffice for use on removable drives. If there are problems with the Portable version, they should be addressed to them. 3) As for the file associations, they are very easy to change at any time. 4) As a software engineer, you should know better than to evaluate software on a production system.
