One downloads the free ODF plugin from Sun Microsystems and installs it in
MS Office 2007: <http://www.sun.com/software/star/odf_plugin/index.jsp>.

With the plugin installed in MS Office, open the 2007 document and save it
as ODF. Then open the ODF in OpenOffice.

If the free trial of Office 2007 has expired you might be able to use an
older version of MS Office with Microsoft's "compability pack" installed: <
http://office.microsoft.com/en-us/word/HA100444731033.aspx>. This will let
you open the 2007 document in e.g. Office 2003 and then save it in the older
pre-2007 format which OpenOffice will be able to read.

I believe that version 3 of OpenOffice, due in September, will be able to
read MS office 2007 documents. Someone said the new 2.4 version (just
released) would be able to do that but the release notes make no mention of
it.

None of these methods guarantees 100% compability of appearance, layout,
etc. etc. I think Macros will also be an issue.
