So I just ended up deleting the unwanted columns from a copy of the spreadsheet and then printing the whole spreadsheet -- I was pressed for time and it had to be done, one way or another. It worked, but it is not way it is supposed to.

So, what gives? What am I missing here? How do I go about printing only a selected number of columns in a spreadsheet such that they appear side by side on the printout?

Your deletion technique was almost there: the solution (workaround?) is simply to hide the columns you don't need, in fact. Select the unwanted columns and go to Format | Column > | Hide or right-click the column header(s) and select Hide from the context menu. After printing, to resurrect the hidden columns, select a range of columns spanning the hidden ones and go to Show in the same places as above.
