For each type of file (that is extension) right-click on a file of that type, select “Open With" from the menu, select “Choose program”, then select the program you want to use, making sure you have ticked the box in front of “Always use the selected program to open this kind of file”. That will change the default for that file type to whatever program you selected. And the icon will change appropriately

When you install OpenOffice.org, you must have ticked on icons at that time which associated OpenOffice.org to Microsoft Office documents.

I purchased it for the powerpoint portion of it, not the word processor,
which I do not mind having, but not as default.  It has taken over all my
docs - and it is a mess.  Half the time they refuse to open.

Any document should open according to its icon. If it is an OpenOffice.org icon, it will open in OpenOffice.org. It it is a Microsoft Office icon, it will open in Microsoft Office. Change as described above (though making sure you don’t try to have any OpenOffice.documents opened by Microsoft Office, and don’t try to have an Office 2007 documents opened by OpenOffice.org. Note that icons may not change until you reboot. If you mess up one of the changes, just change it again.
