Assuming you're running Windows, you might want to install the free
Microsoft Word Viewer, so you can see how your documents will look in
Word.

This is highly unusual behavior -- I've been sending OOo-created .doc
files with tables to people for a long time and never had anything like
that (currently on version 2.3.1). So there would seem to be something
strange about your setup that makes this happen. It might help if we
could see an example document that has the problem, sanitized of any
sensitive data. Depending on the root cause of the problem, you could
try attaching it in .odt format to see if others see the same issue. The
list generally doesn't accept .doc files, but maybe you could upload it
someplace in that format for the folks here to take a look. You also
didn't mention what operating system you're using, which might be
significant, as well as where you are getting your OOo version. We
certainly don't want you missing job opportunities!
