When you installed Open Office you probably agreed to it being the default program for Microsoft Office documents (it is one of the options offered to you during the installation process). This can easily be changed by the normal process your system uses for changing file associations. Assuming you are using Windows, this can either be done through the Control Panel or, more directly, by right clicking on one of the documents, selecting 'Open With', choosing the program you want to use, and making sure that the 'Always use this program' box is ticked.
