does open office have the ability to write, spell & grammar check in Spanish?
Spell, yes. Not sure if there's a Spanish grammar checker or thesaurus.
1. Install the Spanish dictionary: File>Wizards>Install>New>Dictionaries. If there is a grammar checker you will be given the option to install it at the same time. Ditto for a thesaurus.
2. Set Spanish as your default language either "for this document only" or "for all documents": Tools>Options>Language Settings>Languages.
If you want to write multilingual documents you can set a language for each word/sentence/paragraph by creating "styles" for each language and setting the appropriate style for the piece of text in question. You can create and save a template defining your styles which you can then re-use over and over instead of having to create the styles each time. All this depends, of course, on you having all the relevant dictionaries installed. See http://www.oooforum.org/forum/viewtopic.phtml?t=50862 for more details and study the documentation on styles at http://wiki.services.openoffice.org/wiki/Documentation/OOoAuthors_User_Manual/Writer_Guide
