You haven't told us which OS (Operating System - eg. Linux, Mac, Solaris, Windows, etc.) you are using, but I will guess it is same flavor of Windows. If you have completed the installation, you will find the shortcuts to start the program in your "Start -> All Programs" menu. The current versions does automatically create any desktop icon shortcuts to start the program.
I am puzzled how you come to have "several" files on your desktop. By default the OOo (OpenOffice.org) installer program creates just one desktop folder, which contains the files used during installation.
