I'm new to mac and to open office, so I apologize most profusely for the stupidity of this question, and yet, I have to know!

There's an appropriate saying here [it's an oldie but a goodie]: the only stupid question is the one that isn't asked.

Why is there a pseudo harddrive icon labeled Open office.org floating around on my desktop? It bugged me, so I threw it in the trash. Was that ok?

That pseudo hard drive "Disk Image" is needed for you to access the archive. After you've installed the program, feel free to eject the image by any means convenient.

Why does Open office take up twice the memory it says it's supposed to?

How much is that, exactly? I don't believe i've ever seen a figure as to just how memory is needed - this should vary according to what you are currently doing in the program.

Can I delete Open office? I can't find anything on this mac that explains how to delete or remove an application. If I've somehow installed it wrong or messed it up by throwing away the annoying icon, I want to be able to remove it and re-install it.

Relax. This is a very forgiving process. As long as you can find the OpenOffice program icon to click it, and the program starts when clicked, then the install is OK. If you really want to delete it, just grab that icon and drop it in the trash. IS OpenOffice opening for you?

If it is not opening then we would want to know more details, such as which version of OS X and OO you are using.
