OpenOffice.org has no particular way of typing Chinese characters. It leaves character input entirely and totally up to the operating system.

That is, if you can type Chinese characters in other applications on your system, then you should be able to type them in OpenOffice in exactly the same way.

Usually this amounts to changing to a Chinese keyboard and a Chinese IME for input. Then, when you are finished typing your Chinese characters, you can switch back to your normal input method.

You do not indicate what operating system you are using, but all operating systems that I am aware of come with a virtual Chinese keyboard and Chinese IME or have it available on the web.

You should be able to find more details through Google and searching on [type Chinese] followed by the name and/or version of your operating system, e.g. [type Chinese Linux] or [type Chinese Ubuntu] or [type Chinese Vista]. The explanation at http://ccat.sas.upenn.edu/~nsivin/chinp.html may be what you need. OpenOffice is covered at the bottom of the article.

Also, within OpenOffice.org Writer, go to Tools → Options... → Language Settings → Languages and assure that there is a checkmark in front of “Enabled for Asian languages”. Set the default type of Chinese you want in the Asian box.
