Actually, the assumption is wrong in this case. Since the OS X version of Open Office is installed via click and drag, there is no reason different versions can not coexist. They are going to have different names, unless you rename them. If you did rename them to be the same, then the newer version would over-write [thus effectively deleting] the old version when you drag it to / Applications. While this sounds like what you are asking for, let me suggest that you keep the X11 version around while testing the Aqua version. The Aqua version is a beta test and may still have significant bugs, in which case it is nice to have a backup plan. It is officially recommended to not rely upon a beta version.
