The problem - and the solution - is only in how you try to expand the pasted object, I think. I imagine that you are dragging the green handles, which resizes the object but distorts the content without changing how much of it you can see. Instead, select the pasted object and go to Edit | Object > | Edit - or simply double-click it. This opens the original object - here, your table - in a Writer window where you can manipulate it. Dragging the boundary of the embedded Writer window behaves differently, and you should be able to expand it to include your entire table. Click outside this embedded window to return to the normal view of the Impress document. You can then scale the object if you need to.
