You don't tell us which versions of OS X and OOo you have, but i'll punt. Open up the Applications folder, click and drag the OpenOffice application to the trash. If you are worried about disk space, you can also delete the settings: go to the Library folder in your home directory, within that you'll see some sub-directories like "OpenOffice.org" and "OpenOffice.org2". Drag these both to the trash and you are done.
