I think this is a too much generic question for this list. You can get
excellent info in Internet about PBX concept and SIP server.

For example:

- PBX allows avanced features as dialplan, conference, voicemails, IVR menus,
call parking, maybe multiprotocolo, etc.

- A SIP server can be a SIP registar in which clients SIP devices does the
REGISTER, a SIP proxy so users call through it (or to it), registar server...
