+1 We have talked of revisiting what gets displayed by default before too and also worked on a column selector that would allow users to display these other attributes when they feel it is necessary. Together, it may help address the information overload issue you are talking about. Can you and/or anyone else in the community continue the list you started here and identify the columns that are not useful to you in the various list views in Ovirt?
