If you plan on using CentOS going forward, I would recommend using (starting 
with) stream, as CentOS 8 will be completely EOL at the end of this year.

That said, you can easily convert a CentOS 8 server to CentOS Stream by running 
these commands: 

dnf swap centos-linux-repos centos-stream-repos
dnf distro-sync
