Just have each host have access to the LUNs from the array. Do you have redundant Ethernet switches? From a performance aspect, usually iSCSI will outperform NFS. Also, make more than one iSCSI LUN, That way you can distribute virtual disks across multiple storage domains. Just have all iSCSI LUNs mountable on all servers.
