As someone who has used the Oracle spin of oVirt for a while, there are no 'gotchas'. The subscription for Oracle Linux includes stuff like ULN (still no idea what it does/what are its benefits) and Ksplice kernel live patching. And of course the tech support, in case you'd need it. I run Oracle Linux on both the Oracle Kernel and their RedHat Compatible kernel.
As for getting the Oracle spin of oVirt going, I believe that you only have to configure the OLVM repos. There shouldn't be any reason for it to not work on RHEL.
One thing to note that, at least as of couple of months ago, OLVM 4.5.x was only available for EL8, and iirc there has not really been a big push on Oracle side to bring it forward on EL9/EL10

Oracle has a nasty reputation for giving most of a product away for free, telling you that you need to pay for one critical piece, and then trying to charge you for the last five years (+ interest), whether or not you were actually using it. Forgive me if I am a bit skeptical.
