if you fill a form which is save as a static XFA it will contain and XFA entry as well as AcroForm field entries. Now non XFA aware applications will only see the AcroForm and use these fields while Acrobat, Reader and propably others will look at the XFA content. As the XFA data has not been updated when the AcroForm fields have been filled only Acrobat will still see the old data within the XFA which it will use to show the fields content. A workaround is to remoce the XFA entry after the AcroForm has been filled. See https://issues.apache.org/jira/browse/PDFBOX-2755.
