Fellow ColdFusion dev here, but I don’t think the programming language
is the issue.
If you look at the comments on the Stackoverflow question you posted,
you’ll see many pointing out that replacing text is not a trivial
exercise. That is, it’s not a simple “drop-in-a-jar” and your
problems are solved situation.
Please look on the PDFBox site, regarding why their ReplaceText example
was removed:
