The example uses incremental save. Then make your changes. If it still doesn't work, please upload source and result PDF and code to a sharehoster. As I wrote, the example in 1.8 doesn't support adding signatures to existing PDFs but it may be worth a try with the code I posted. To put a signature in a field it must be a empty signature field. You can only add 1 signature at a time. I.e. load, sign, save incrementally.
