I looked at that content stream again, it seems you're using a pattern "color". IIRC there's a PDFBox weakness with patterns that are very small.

It is interesting, that the watermark gets displayed at a zoom level of about 200%. The 
font itself is very big. So I think, it has nothing to do with some sort of
