Not that it can't be done, but its pretty difficult. The time spent building the dependencies manually will probably be as much or longer as learning how to use Maven.
I was skeptical that I could pick up SM and Maven quickly, but I found starting a project of my own that mirrored one of the SM examples was the way to go. If you just update the pom.xml(s) to change project and namespace, you should be out of Maven quickly and get the dependency management for free. Don't be scared off by the first time Maven runs and downloads half of the Internet, it only has to do it once. What type of integration projects are you using on Mule today?
