Hello Martijn. I don't have experience with SyncEvolution -- but if you've got a copy of Outlook handy, perhaps you could further test your Funambol/SOGo setup with the Funambol Outlook Sync Client.

There is a bug where tasks completed in Outlook aren't synced to SOGo (http://www.sogo.nu/bugs/view.php?id=737), but otherwise, task syncs look good to me with that client.
