There is no process listening on port 5000, I there a missing or not started service?

Yes, this is becausse the ocsmanager package is not running. This is not a mandatory package and is used only for the autodiscovery protocol and the availability protocol for Outlook >= 2007.

Now, Outlook for Mac does not use RPC at all for accessing Exchange. Rather it uses the so-called "Exchange Web Services", which is basically a set of SOAP methods, which we do not support yet. Thus you would be better using iCal connected to SOGo than using Outlook.
