Perhaps you have missed some packages
What is the return of :
dpkg --get-selections | grep sasl
dpkg --get-selections | grep cyrus
I have seen this doc (in french - i guess you are french too) :

There is a list of packages to install for cyrus and sasl, check it.
Also can you post the return of :
ps aux | grep sasl
And when you log in the web interface, what are the imap returns in
/var/log/syslog?

Concerning the cyrus log, i can only find those lines when in maillog :
