MJ, all, if it bothers you, I suggest two options:
1. Pay inverse to implement the fix (you will make them happy, yourself happy, and everyone else happy) 2. Look for a postfix_header_checks (or similar) rule that sends a mail back to winmail.dat authors, pointing them to http://support.microsoft.com/kb/138053/ .
