Do you plan to restrict user's mailbox with quota? If yes, what will be the maximum size of one mailbox? Do you plan any other service on this host? Web, file sharing (e.g. ownCloud), etc.? If yes, how many space will you add for one user?

BTW partitions.
As my opinion we need to keep safely the system partition and the /var folder. If you don't want to restrict your users with quota, you need to put the /var/mail folder into separated partition. If you plan to use some databases (other than sogo database), you need to create separated partition for DB. And if you will use file sharing, that files need to store on another partition too.

For example:
- maximum 50 mailbox with 1GB quota / mailbox (no need separate partition for /var/mail but /var)
- no plus huge database (no need separate partition)
- fileshare service with 4GB/user space (separate partition)

sda1    / - 4GB enough
sda2    /var - 60GB enough
sda3    /var/data - 250GB enough
sda4    swap - size is phisical memsize multiple by 1.5

If you need more partition, íou will need extended partition or GPT partition table. If you plan use virtual machines, you need to use full disk images instead of partitions (e.g. by easy resize reasons)
