That's actually a great idea. Currently, our users are provided with an OpenFire server to use with their Spark clients. (Please see http://www.igniterealtime.org/ for more information.)
The biggest drawback to this particular chat service (both server and client) is that it uses Java. So, each client takes up ~60MB of RAM for a simple chat session.
