That depends on which Linux distro and which IMAP service you are using. When it's Debian and Cyrus, you will find the mail in /var/spool/cyrus and the databases in /usr/lib/cyrus/ . When you are using Dovecot, you will find in most cases the mail in the homedirectoies of the users.
