So you remove the subscription in Apple Calendar (not the calender, only
its subscription link in Apple calendar).
Apple Calendar refreshes its calendar list from SOGo and finds the
removed one.
Then it happily subscribes to it.

That's how Apple calendar works.
It always synchronizes and shows all calendars.


With other words, you can not delete a calendar in SOGo with Apple
calendar.
You have to delete it in SOGo webinterface instead.
