Yes I have made a snapshot of my Zentyal VM ( running on Proxmox ) and fortunately, there was no service interruption. ( imap, spamd, clamav, zentyal services etc ...)

    It is my primary DC !

Yep, Sogo V2.3.0 is installed on the Zentyal server Core 4.1 running Ubuntu 14.4.

I have gone through the Sogo docs but I cannot find where there is the sogo update procedure.

    There are only installation from scratch procedures...
