My wish is about using a different carddav server than the one embedded.
One should be able to specify whether sogo is their carddav server or not
(and specify the 3rd party as a standard URL / login / pass)

So the user can use one central carddav server (ownCloud, google,
etc...) for all his tools, including Sogo
In my understanding Roundcube is a webmail client including a address
book. With the extension one can use external CardDAV address books.
Roundcube itself IMHO does have a CardDAV server. So this is a major
difference between Roundcube and SOGo.
So your wish is mostly about the SOGo web GUI, is it?
For someone using the SOGo server with other front ends this may be useless.
