SOGo only knows of one Sent folder. It doesn't recognise any other (shared or not) folder you use for send emails. Therefore you can not change displayed fields for shared folders. You could switch the one Sent folder of SOGo to that other folder, but you would then store your own sent emails in there too. Or you would need to switch it forth and back constantly.
