that sounds perfect, but the patch didn't make it into the release, or am I 
seeing it wrong?
At least it is not yet included in Mailcow and SOGo 5.12.0 is used there.

I had exactly the same problem and that's why I prepared a patch to make 
the prefix configurable - see commit 4a68909060 and the related 
configuration variable SOGoCalendarJitsiRoomPrefix.
