SA can do the job partly for you. All mails exeeding or below a threshold are fed by SA to sa-learn. In Mail::Spamassassin::Conf you will find the threshold parameter for ham and spam under the bayes autolearn. RTFM; take the time to read "man Mail::Spamassassin::Conf". It payes back.
