I have been downloading a daily lists of newly registered domains [1] for almost a year. Out of 37 million domain [2] names I don't see a single one with an underscore in it.
I'm not feeling spry enough to register a domain with an underscore. DNS will happily handle the underscore, even though it's not legal in a host name. (DNS > just hostnames.)
