How many email to you received by day? (or by minute???)
Excluding spam it's probably less than 50 per day for all accounts on this server! So there shouldn't ever be a problem. I *think* that the changes I've made today including restarting Exim seem to be working. The problem may have been related to one account getting full and not accepting any new mail but I don't find this particularly convincing for the mail server running out of resources,
