Spamassassin cannot put a message into a folder. SpamAssassin can only mark the message as spam or not mark the message as spam.

So how to create a rule that automaticly sets all  emails as SPAM when the
Subject beginss with [SPAM] ??

I'm not sure I follow.. But it sounds like this is a tool better suited for your MTA or maybe procmail.
